Russell Norman, initially an English teacher, made a notable shift to become a chef driven by his passion. Renowned as a Saturday Kitchen chef, he further solidified his culinary footprint as the owner and founder of Brutto, and co-founder of London’s Polpo and Spintino.

He also wrote a cookbook titled, “Polpo: a Venetian Cookbook (of Sorts)”. That book won the award of Waterstones Book of the Year in 2012. He was very passionate about Italian food and to practice his hand on that Russell stayed in Italy for a year so that he could learn to cook like a “90-year-old Venetian granny”.

Norman’s first restaurant was a Venetian one in Soho named, ‘Polpo’ opened in 2009. After the financial recession, Norman and Richard Betty joined hands in co-founding 4 more restaurants together, the Polpo clones ‘Polpetta’ and ‘Da Polpo’; ‘Spuntino’, a New York-style Italian diner; and ‘Mishkin’s’, a mixture of East End caff and Lower East Side Jewish deli, located in Covent Garden.

He also opened Trattoria Brutto after his investor withdrew from the other restaurants and signed off his name from the chain of eateries. Brutto is famous for its steak, pasta, and the in-house bar, as Russel was particularly fond of loud music in the restaurants.
