INGREDIENTS
1 & 1/2 cup Water
2 Bunch Gongura Leaves / Ambada (chopped)
2 tbsp soaked Peanuts
2 tbsp soaked Rice
2 tbsp soaked Yellow Split Peas
Salt (as per taste)
Jaggery (as per taste)
1 tbsp Multi-grain Flour (roasted)
Water (as required)
For Tempering <br>2-3 tbsp Oil<br>1 tsp Mustard Seeds<br>1 tsp Cumin Seeds<br>8-10 crushed Garlic Cloves<br>3 chopped Green Chillies<br>10-12 Curry Leaves<br>1/4 tsp Turmeric Powder<br>1/4 tsp Asafoetida<br>2 Red Chillies
DIRECTION
- Take medium-sized Ambada or Gongura leaves, wash them well, chop them, and cook them in the pressure cooker in a container by adding water.<br>Either in the same pressure cooker or another also add soaked yellow split peas, rice, and peanuts into the cooker and steam well.<br>When the pressure cooker gives three whistles, turn off the flame and let it cool.
- Take out the ambadi bhaji, with the help of a whisk, and stir the bhaji well.<br>Then add the steamed rice, 1 tbsp multigrain flour to enhance taste and thicken the consistency.<br>Whisk the bhaji well.<br>Then add jaggery and salt while the bhaji is hot.<br>Then add cooked yellow split peas and peanut to bhaji and mix well.<br>Heat a pan, then add the bhaji mixture and let it come to a boil.
- Tempering the Bhaji
In a separate tempering pan/ tadka pan, add oil, and mustard seeds.
Once the mustard seeds splutter, add cumin seeds, crushed garlic cloves, chopped green chilies, curry leaves, Asafoetida, Turmeric Powder, and Red chilies.
Let everything sizzle in oil for some time. Then add the sizzling oil into the bhaji and cover the lid immediately.
After some time, uncover the lid and mix well.

NOTES
After adding the tempering mix into bhaji, cover the lid immediately to pack the flavour into bhaji.
Do not skip jaggery, as it helps in lessening the sour taste of Ambadi Bhaji.
