Aloo Pitika is a famous mashed potato recipe in Indian style. It is rich in red and green chillies along with a fresh burst of red onion and coriander leaves. This is one of the famous recipes in North Eastern India. A great choice to eat with leftover fermented water rice overnight. Aloo Pitika of the most simple and very easy recipes to make with limited ingredients. Do not skip mustard oil, as it adds an unmistakable fragrance to the dish.

INGREDIENTS
4-5 Medium Sized Potatoes
Water
Salt to Taste
2 tbsp mustard oil
2 tbsp finely chopped coriander
3 tbsp finely chopped onions
1-2 finely chopped green chillies
DIRECTION
- Boiling Potatoes
Take 4-5 medium sized potatoes and boil it in water.
Add salt and boil it until the potatoes softens.
Switch off the flame and peel off the potatoes. - Making Aloo Pitika
Mash the boiled potatoes while they are slightly hot.
Add finely chopped onions, 1-2 green chillies, 2 tbsp mustard oil, 2 tbsp fresh coriander leaves, and salt to taste.
Mix everything together, your favourite Aloo Pitika is ready!
NOTES
Aloo Pitika can be easily customised by adding fried onions, peanuts, and dried red chillies.
You can also boil the potatoes in a Pressure cooker giving 2-3 full whistles in high flame.
Do not skip or replace adding mustard oil.
