Aloo Bharta is one of the simplest and easiest recipes made with boiled potatoes. It has different names in different areas, like Aloo Pitika in Assam, Aloo ka Chokha in Bihar, and mashed potatoes in European and English breakfasts. In India, it is a popular recipe that is served along with khichdi, chawal ki roti, paratha or plain roti, plain rice and dal, uttapam, etc. It doesn’t take much to cook, making it an ideal choice for busy moms and bachelors.

INGREDIENTS
2 Medium sizes Potatoes
1½ tbsp finely chopped garlic
1 tsp cumin seeds
1½ tbsp oil
1-2 green chillies, chopped
3-4 chopped spring onion bulbs
1½ tsp turmeric powder
1½ tsp finely chopped ginger
1½ tsp dried mango powder (amchur)
2 tbsp freshly chopped coriander leaves
1½ tsp Tata Sampann Kitchen King Masala
1½ tsp red chilli powder
Salt to taste
Chopped spring onion greens
DIRECTION
- Boiling Potatoes
Boil two potatoes either in a pressure cooker or in a pan. Cook until they soften.
Cool them down and peel them off.
Grate the potatoes and keep them aside. - Making Aloo Bharta
Take a non-stick pan and heat it. Add oil then add cumin seeds to the hot oil and allow the seeds to change color.
Then add spring onion bulbs, green chilies, ginger, and garlic to the pan. Cook for 1-2 more minutes and sauté the ingredients well.
Then add Tata Sampann Kitchen King Masala, red chili powder, and turmeric powder. Mix well and cook for another 2-3 minutes.
Then add the grated potatoes to the pan and add 1/2 cup water. Mix well and cook for 2 minutes on medium flame.
Then add salt as per taste, amchur, and chopped coriander leaves. Sauté well and cook for one more minute.
Then turn off the flame, garnish with spring onions, serve hot, and enjoy.
NOTES
Grate the potatoes while they are slightly hot.
You can customise Aloo Bharta further by adding peanuts, cabbage, grated coconut, and green peas.
Do not skip adding some amount of water to the pan after adding potatoes to the masala, as it enhances the taste and consistency of the Aloo Bharta.
